Nested in the scenic Jura mountains of France, French Gruyère is a celebrated cheese renowned for its rich heritage and exceptional quality. This semi-hard cheese is made from unpasteurized cow’s milk, sourced from the lush pastures that thrive in the region’s unique microclimate.
It is matured during a minimum of 4 months, on spruce boards, a local wood essential for the maturing process : gross cut, the boards allow air to circulate beneath the 40 kg wheels, ensuring an homogenous ripening.
Sensory Profile
The cheese boasts a firm texture and a distinct, sweet, fruity and very floral flavor profile, developed through a traditional aging process that lasts between five months to a year. Its golden-yellow hue and delightful aroma reflect the natural flora of the Jura mountains, giving each wheel its unique character.
Pairings
Pairing perfectly with a range of wines, French Gruyère shines alongside a full-bodied Chardonnay or a crisp Pinot Noir, enhancing the tasting experience with complementary notes.
You will also enjoy it with Shiraz from Australia or Zinfandel from California.
Do not forget to eat cheese with beer or cider ! A nice Lager or Brut Cider will be a good discovery.
