Terroir and Craftsmanship
Made from raw cow’s milk in the flower-rich pastures of the Jura mountains, Fruity Comté is matured for a minimum of 4 months. The rind evolves from yellow to brown, while the paste ranges from ivory to golden yellow depending on the season.
The texture is firm on the touch, becoming supple and slightly brittle with age, before melting fully on the palate.
Sensory Profile
On the nose: a joyful bouquet of floral notes, tropical pineapple, and dried hazelnut. On the palate: floral, nutty, and citrus complexity — dried apricots, pineapple, and nuts in elegant harmony. The 12-month version amplifies all these impressions without losing balance.
Pairings
A Savagnin, Riesling, or Côtes du Rhône (Grenache) complement the aromatic richness of this style. An Abbey or Trappist beer is a truly inspired match, its fruity and spicy character entering a lively dialogue with the cheese.
On the board: green apples, walnuts, hazelnuts, Thai dried mango, heather honey, and blueberry jam. A seed baguette or walnut bread rounds off this vibrant pairing.
