Terroir and Craftsmanship
Nestled in the Jura mountains of Franche-Comté, this 32-month Gold Medal Comté is crafted from raw cow’s milk sourced exclusively from summer pastures, giving the paste its deep, intense yellow colour.
Each wheel is matured for an exceptional 32 months in carefully tended cellars, developing a solid, deep-brown grainy rind and a firm paste marked by the satisfying crunch of tyrosine crystals.
Sensory Profile
The paste is firm and supple, melting luxuriously on the palate. This Comté belongs to the prestigious “roasted universe” (empyreumatic), complex and distinctive with a beautiful persistence. On the nose: biscuit and warm brioche. On the palate: roasted onion, dark chocolate, and subtle burnt nuances.
Pairings
An Arbois from the Jura or a structured Red Bordeaux (Saint-Émilion or Haut-Médoc, minimum 7 years) are the classic wine choices. Try also Dark & Pu’er tea or a Black tea from Sri Lanka, and a Duvel Triple Beer.
For spirits, a Gin and Tonic, floral Sake, or a Lagavullin whisky are inspired matches. On the board: walnuts, hazelnuts, pineapple, dried fruits, served on walnut or hazelnut bread.
