Terroir and Craftsmanship
The youngest expression of the Comté range, Lactic Comté is produced from raw cow’s milk in the Franche-Comté highlands and matured for a minimum of 4 months. The paste ranges from ivory to yellow depending on the season — warmer months yield a more vibrant colour.
Firm to the touch, it melts gently on the palate, offering the approachable, dairy-forward character of a young mountain cheese.
Sensory Profile
Fresh dairy aromas define this style: yoghurt acidity, cooked milk, butter, white chocolate, and cream. The 12-month version deepens in intensity, moving towards richer cooked milk notes, while the 6-month remains lighter and more delicately lactic.
Pairings
A Mondeuse, an Alsace Gewürztraminer, or a Riesling pair beautifully with the creamy freshness of this Comté. A craft white beer or a blue-green tea are equally pleasant companions.
On the board: walnuts, hazelnuts, green apples, acacia honey, fig chutney, and blueberry jam. A seed baguette or walnut bread adds rustic charm.
